I told you I was going to try and give you a recipe every week. So here's tonight's dinner.
A healthier take on Homestyle Chicken and Gravy.
That can be made in less than 20 minutes! Lets get started...
What you'll need:
Main Dish
- 1 lb. boneless skinless chicken thighs or breasts
- 1 tablespoon olive oil butter
- 1/4 cup low fat cream of chicken condensed soup
- 1/2 cup low sodium chicken broth
- fresh mushrooms (optional)
- 1/2 small yellow onion
- garlic salt and pepper
Side Dish
- frozen green beans
- 1/2 small yellow onion
- 1/2 teaspoon of pimentos (or red bell pepper)
*served with store bought homestyle smashed potatoes (optional)
1. In a medium saute pan, melt your tablespoon of butter on medium high heat.
2. Salt and Pepper both sides of your chicken and add to pan.
3. Once your chicken is cooked, remove from pan and set to the side, lower heat to medium.
These next steps are for the "gravy"- no butter or flour required.
4. Add chopped onions and mushrooms...cook until tender.
5. Add cream of chicken soup and chicken broth- simmer for 3-5 min.
6. Turn stove off and add chicken back into pan to let sit in gravy.
7. In small sauce pan boil salted water, add onions and green beans. Cook just until aldente (soft but still has a bite) Strain and add chopped pimentos (residual heat will cook them)
Serve with rice, noodles, or in my case store bought mashed potatoes (I have no desire to make from scratch-unless it's a holiday or special occasion)
*In my experience...kids eat with their eyes (just as we do) GREEN becomes icky because a lot of vegetables are green...make they're veggies pretty and colorful!!! you don't have to add cheese or butter to them, just add color (pimentos in this case) and whatever you do...DON'T OVERCOOK THEM!!! Kids like crunchy things, and not to mention most vegetables will turn a gross color once you've cooked all the nutrients out of them. So in simple terms...Make crunchy, pretty veggies and they will devour them.
